Quick Fix

So it occurred to me this afternoon, while my friend Sarah was visiting, that I had bought the wrong kind of pie crust for my potpie. I couldn’t find the Pillsbury pie crusts, so I thought perhaps that I could take a frozen crust, defrost it, and roll it out. The answer to that question would be no. After letting the pie crust thaw for a bit, I tried to remove it from its tin, which was a big mess. I put the pieces on a plate in the fridge and went out to look for a better version, which I found at my trusty corner market. (Oh Lime Tree, how I love thee.) But I didn’t want to waste the in-pieces crust so I broke it up even further, spread butter, sugar, brown sugar and cinnamon on the pieces and into the oven they went for 15 minutes. Now my house smells like apple pie and we have yummy sugary bits to snack on. A quick fix indeed! The actual chicken potpie is in the oven now. Will post pics when it comes out.
